Organic White Kiawe Honey

Our rare, certified organic Kiawe Honey is gathered from an isolated Kiawe forest on the island of Hawaii. Pure Kiawe Honey rapidly and naturally crystallizes into an exceptionally creamy texture, creating a pearly white honey with a unique, delicate tropical flavor unlike anything you have ever tasted.

Organic Sunset Kiawe Honey

Organic Sunset Kiawe is our rarest award winning variety of Hawaiian Honey. The story behind this honey begins in our isolated Kiawe Forest, where our bees collect Kiawe nectar of exceptional purity and quality. Normally this nectar results in an extraordinary white and creamy honey, but at the very end of the Kiawe season, which we call the Sunset Bloom, our bees sometimes make honey that is the color of lemon frosting.

The honey has the same creamy texture as our white Kiawe Honey, but there is a faint hint of citrus and a yummy beeswax finish. We don't know the source of the subtle change, instead we celebrate the mystery in occasion when it happens.

Organic Winter Honey

During the winter our bees forage over rolling pasture and forest on the windward side of Mauna Kea Volcano. Our bee yards are spread out between 900 and 2200 feet of elevation, giving them access to a variety of blooming trees, wildflowers, and grasses. There is always a bit of honey left in the comb from summer Kiawe (white honey) season, ensuring that our Winter Blend naturally crystallizes into a creamy smooth texture. This blend is a medium bodied honey with a forward burst of butterscotch and a lingering nutty finish. Winter Honey production is highly unpredictable and rare since heavy winter rains can wash the nectar from the open blossoms; enjoy it while you can.

Organic Sweet Aloha Honey

We take great care to select locations for our bees that will result in amazingly pure, raw, organic honey. Our bees are happiest when placed in locations with a wide variety of blooming trees, shrubs and wildflowers, resulting in a tasty wild-crafted honey blend that is full-bodied and flavorful with earthy, caramel notes. Different plants bloom in different seasons, so our honey will vary from batch-to-batch and season-to-season, producing variations in color and taste from batch to batch.

Raw honey can crystallize very rapidly; if you prefer liquid honey, simply warm the honey, but please take care to not heat the honey above 110°F, as this will destroy the beneficial enzymes, proteins and pollen that occur in raw honey.

Organic Lehua Honey

Our Rare Hawaiian Organic Lehua Honey is derived from nectar of the 'Ohia tree. The 'Ohia tree is a special, sacred hardwood tree that is endemic to Hawaii. It is the first tree to take root in the solid black lava, colonizing the lava and forging the way for other plants to follow. 'Ohia trees have beautiful red or yellow flowers that Hawaiians gave a name of their own: Lehua, which means "Flowers sacred to the Gods." Hawaiian legend explains that 'Ohia and Lehua were lovers, but the Volcano Goddess, Pele, desired the handsome 'Ohia. 'Ohia rejected Pele's advances, putting her in such a fury that she turned him into a tree. Lehua was so devastated by the loss of her lover that the Gods took pity on her, turning her into a flower and placing her on the 'Ohia tree. It is said that if someone picks a Lehua flower from the 'Ohia tree it causes rain...signifying Lehua's tears.

The nectar from Lehua blossoms produces a beautiful honey with a smooth, creamy consistency and pearly white color. With a unique and subtle floral flavor and an earthy undertone, our raw, organic Lehua honey is truly a taste of the Island of Hawaii! Harvested in small batches only a few times a year, this variety of honey is truly a rare treat and supplies are limited.
