We take great care to select locations for our bees that will result in amazingly pure, raw, organic honey. Our bees are happiest when placed in locations with a wide variety of blooming trees, shrubs and wildflowers, resulting in a tasty wild-crafted honey blend that is full-bodied and flavorful with earthy, caramel notes. Different plants bloom in different seasons, so our honey will vary from batch-to-batch and season-to-season, producing variations in color and taste from batch to batch.

Raw honey can crystallize very rapidly; if you prefer liquid honey, simply warm the honey, but please take care to not heat the honey above 110°F, as this will destroy the beneficial enzymes, proteins and pollen that occur in raw honey.

By infusing our delicate, Certified Organic Kiawe Honey with organic dried lavender blossoms, we have created a true culinary treat. This is the only honey that we gently warm to infuse the lavender essential oil into the honey, but we do not warm enough to destroy beneficial enzymes or pollen, so the honey is still raw and recrystallizes into the creamy consistency that everyone expects from us. We do suggest that you gently warm portions of this honey that you want to drizzle over fresh berries, grapefruit, star fruit, dragon fruit or ice cream! Use it in its creamy state for spreading over cured meats and fine cheeses, or served on crackers or bread for a gourmet appetizer. Available in 8 oz. and 3 oz. sizes.
