Our Rare Hawaiian Organic Macadamia Nut Honey is collected exclusively from the fragrant, white flowers of the Macadamia Nut Tree that blooms in winter. This rich, dark honey comes from a beautiful, certified organic macadamia nut orchard in North Kohala on the Big Island of Hawaii. The orchard and surrounding property are part of an ahupua'a that is being revitalized. Ahupua'a - an ancient, native Hawaiian land management system that extended from the mountain to the sea - allowed for sustainable food production and sharing of resources from different climatic zones.
Because heat can alter honey's color, texture, unique flavor, and naturally occurring enzymes, we offer all of our honeys in their pure, natural form - unheated and unfiltered. Our cold extraction process allows the honey to retain its natural enzymes and unique tropical flavor. Our liquid macadamia blossom honey will slowly crystallize over time and may or may not be grainy, depending upon many factors. By placing the jar in pan of warm water, or in a toaster oven on "warm," you can return the honey to liquid.
